Chicken Karahi: A Wonderfully Welcoming Meal
First, I collected a small bunch of juicy tomatoes, and a bunch of fragrant thyme as well as bay
leaves. There was something grounding about the simplicity of it all: chicken, whole black
pepper, tomatoes, bay leaves and ginger. I started by heating cooking oil in a pan, letting the
tomatoes soften until they released their juices. The chicken followed, releasing a rich aroma
that filled the kitchen.
Then began the slow ritual of adding broth. The world outside seemed to pause as I focused
only on the pot before me, watching the karahi transform from bland chicken to beautiful
delicacy.

When the chicken finally reached that perfect balance, tender but still with a little bite. I stirred
in a generous handful of black pepper.
I finished it with a sprinkle of green chillis before spooning it into a bowl.
Sitting down by the window, I took the first bite. I was instantly transported to the days where
my mother would make it for me along with a hot steaming Roti. It tasted like warmth, like
patience turned into flavor. She always made it on rainy days and dished it out to the entire
family. She was always the Centerstone, always bringing the family together and leaving
everyone with smiles. By the time I finished, the sun had begun to sink low, painting the
kitchen in gold. I wiped the tear rolling down my cheek. I wished our entire family could
reunite once again for a meal but alas everyone has their own paths to traverse. I washed the
dishes slowly, still feeling the quiet contentment that only a day spent cooking can bring. The
Karahi wasn’t just dinner, it was a diary entwined with flavor.
